The process of germi- nation enhances the bio-availability and nutrients accumulation. Especially, GBR from colors rice groups such as Sangyod rice and Riceberry rice. Which is usually eaten with soft rice. Objective : To compare the nutrition value and bioactive compounds on four different treatment from GBR mixed with Sangyod brown rice (SR), Riceberry brown rice (RR) and Hombaitoey brown rice (HR) . Methods : Sangyod, Riceberry and Hombaitoey paddy rice grown in Phatthalung province were collected. To produced GBR by rating time to soaking : germinating on Sangyod rice, Riceberry rice and Hombaitoey rice equal to 24: 21 hours, 24: 36 hours and 24: 17 hours, respectively, Then, dried process until the moisture content in the grain is less than 13 percentage. After that mixed GBR samples into 4 formulas. Approximate analysis and bioactive substances was analyzed. Duncan’s New Multiple Range Test (DMRT) was used to analyze. Results : It was found that moisture content, fat content, ash content and anthocyanin were no significant difference. Vary different the ratio of mixing GBR in the formula 4 (65:25:10) is a tendency highest for protein, fiber, and phenolic compounds. While, carbohydrates is the lowest. When, consider the radical scavenging activity by DPPH method, it was found that the fourth formula had the best value. It showed IC 50 of 0.178 mg/ ml. While the radical scavenging activity by ABTS assay showed the formula 3 and 4 had the best value of IC 50 in range between 0.085 - 0.098 mg/ml (P <0.05) Conclusion : Compared for 4 GBR formulas, it was found that the fourth formula which had a mixed ratio be- tween SGR : RGR :HGR is equal to 65:25:10 providing the best nutritional value, followed by formula 3 (55:35:10). It’s indicated that nutrients and bioactive substances in GBR are difference depending on types of rice. Keywords : Chemical properties, bio-functional substances, germinated brown rice
