Rattanawadee nimkaew 1 and Chonthida Ketphet 2* Abstract The objectives of this research were 1) to investigate related information of designing instant food packaging, 2) to design and brand and packaging of Mae Porn spicy seaweed salad to create the identity and the practi- cality, and 3) to evaluate the satisfaction with newly designed brand and packaging of Mae Porn spicy seaweed salad. Data were studied by observing the real site and interviewing the operator.The sample of this study consisted of 100 individuals. The questionnaire was used as the instrument. Data were analyzed and processed through percentage and description. Satisfaction survey was used to survey the opinions on brand and pack- aging in terms of structure and graphics. Data collected were then processed to determine mean and standard deviation. The results of this study indicated that Mae Porn spicy seaweed salad still lacked its brand name, identity of the shop and product. The original packaging was made for containing fresh spicy seaweed salad. However, this research aimed to design new packaging for instant spicy seaweed salad. The brand design was conducted by applying the concept of spicy seaweed salad’s consumption method of local people in Songkhla. Local people prefer eating spicy seaweed salad with Wild Betel Leafbush. This concept was based on to design lines and patterns to create packaging. Virtual image was applied by focusing on materials and functional use, and convenience to eat and deliver.The results of The results of evaluating the satisfaction with the brand showed that the sample’s satis- faction was at a good level. The satisfaction with packaging (first model) was at a good level and the satisfaction with the packaging(second model) was at a goof level. Keywords: Seaweed, brand, packaging.
