Tea Product Khanittha Muadiad 1* , Ruthaiwan Bunkrongcheap 2 and Wanida Petlamul 2 Abstract Introduction : Crotalatia Juncea L. (Sunn hemp) is a leguminous cover crop with a multipurpose use as green manure, animal fodder crop and the traveling place. Moreover, it could also be used in human foods with a pharmacological effect of Sunn hemp. Objective : This research aimed to study the physicochemical properties of Sunn hemp tea on antioxidant activity, total phenolic content and tannin of Sunn hemp tea product. Methods : To studied the duration of firing (10, 15 and 20 min.) for 60 C and drying temperature (80 and 90 C) for 3 hrs. from several parts of Sunn hemp tea; young leaves (2-3 weeks) leaves (50-60 days) and flowers (50-60 days). Results : The three parts of Sunn hemp tea had the moisture content at 6.52-7.74%. The L* value of all sam- ple was decreased (p<0.05) while a* and b* values were increased (p<0.05) when the duration firing time and drying temperature were increased. The results of antioxidant activity phenolic content, and tannin of tea beverage from several parts of Sunn hemp shown increased with the increasing of the duration firing time (p<0.05). Young leaves tea shown the highest value of phenolic content among 141-174 mg/100 mg samples. However, antioxidant activity of flower tea shown more than young leaves tea (P<0.05). Moreover the higher temperature of drying process, the lower antioxidant activity, phenolic content and tannin of tea were obtained. Conclusion : The firing and drying temperature from various parts of Sunn hemp tea were effect on color of tea and also led to increasing the active compounds when firing duration time increased. However, the active compounds tend to decreased when increasing the drying temperature. Keywords : Crotalatia Juncea L. (Sunn hemp), Antioxidant activity, Phenolic content, Tannin
