Abstract
Low quality of Phom Nang seaweed,
Gracilaria fisheri
, was caused by contamination during cultivation.
Cleaning of the seaweed by inside and outside of contaminated removal made a food safety. Cleaning of the
seaweed was done by using washing machine (Panasonic, capacity 9.5 kg)3. Twelve bags containing with fresh
seaweed of 0.5 kg each were cleaned in washing machine in normal type for 5 minutes a round in 5 levels of 0, 3,
5, 7 and 9 rounds. Fresh water was drained and renewed in each round. The seaweed was then centrifuged and
dried at 60°C for 6 hours before kept in plastic bags. The dry seaweed was used to test with Quantitative
Descriptive Analysis (QDA). The color, flavor, texture and contaminate were tested. The results showed that color
of seaweed cleaned 5 rounds has a maximum sensory evaluation of 3.65±0.91 (Mean ± SD) (middle color) and
flavor of seaweed cleaned 3 rounds show a maximum sensory evaluation of 4.19 ± 0.19 (strong flavor). In
addition, texture of seaweed cleaned 3 rounds give a maximum sensory evaluation of 4.19 ± 0.19 (good quality)
and contamination of seaweed cleaned 9 rounds provide a maximum sensory evaluation of 4.74 ± 0.51
(discontamination). The heavy metals; copper, iron, zing, cadmium, lead, manganese, chromium, nickel; were
determined in dry seaweeds cleaned 0, 5, 9 rounds and in those soaked in 250 ppm chitosan solution for heavy
metal adsorbent. The results found that almost of heavy metals decrease except zing and nickel in seaweeds
unused chitosan solution and except cadmium and manganese in seaweeds used chitosan solution. Comparison
between used and unused chitosan solution showed heavy metal in soaked seaweeds in chitosan solution is higher
than the unsoaked seaweed . Therefore quality improvement and contaminated removal in Phom Nang Seaweed,
Gracilaria fisheri
, should done by cleaning in washing machine without soaking in chitosan solution.
