Abstract
Postharvest quality control of rambutan (
Nappelium lappaceum
Linn.) on off-season by coating with
0.2% and 1.0% medium molecular weight (MMW) of chitosan at 13° C and 95% relative humidity was
determined. It was found that MMW of chitosan remarkably reduced weight loss, firmness, spintern browning
and changes of peel color. Consequent to the reduction of total soluble solids (TSS) and titratable acidity (TA)
was higher than control. Moreover, 1.0% and 0.5% MMW of chitosan maintained postharvest quality with the
most effective to prolong storage for 13.56 and 13.33 days respectively.
