Abstract
Soybean meal is the by product from soybean milk manufacturing which was applied as
adsorption material. This work aims to study extraction condition, physical and chemical properties. The
condition of gel formation and characteristics of gel were investigated. The results showed that 5% acetic
acid and pineapple juice were the optimum condition for soybean meal fiber extraction which obtained
soybean meal fiber 58.49 and 32.86 g/ dry weight 100 g, respectively. water holding capacity (WHC) and oil
holding capacity (OHC) of soybean meal fiber extracted with 5% acetic acid and pineapple juice were 7 and
4.65 g water / g sample for WHC and 2.52 and 3.99 g oil / g sample for OHC, respectively. Gel formation of
soybean meal fiber was investigated and the result showed that soybean meal fiber could form gel
complex by using 12% NaOH and ultrasonic bath for 30 minutes. Thus soybean meal can be applied in fiber
extraction with the faced on cholesterol in partiarlar.
