Abstract
The objective of this study was to determine serum Oxygen Radical Absorbance Capacity
(ORAC), high-sensitivity C-reactive protein (hs-CRP) and lipid profiles in type 2 diabetic subjects (n=39)
for 24 wks of
the regular consumption of Sangyod Phattalong brown rice substituting for white rice at
least 2 meals/d compared with control group consumed white rice as usual diet (n=39) at wk0, 8, 16
and 24. Both groups were advised to follow nutrition therapy guideline for diabetes. Results showed
that Sangyod Phattalong brown rice group had mean values of serum ORAC gradually and significantly
increased from wk0 while mean values of hs-CRP significantly decreased at wk24 compared to wk0 but
there were no
significant differences of serum ORAC and hs-CRP in white rice group throughout 24 wks.
No significant changes in lipid profiles were found in both groups. Result data suggested that regular
consumption of Sangyod Phattalong brown rice had health benefits to diabetes.
