analyzed nutrition values containing the water content, crude protein, carbohydrate, crude fat, dietary fiber, ash,
energy, vitamins and elements. The result showed carbohydrate contents of Kra-dad-keal, Klouy thieun, Tam-mung
and Ta-hmad were 79.29, 67.97, 65.57 and 45.92 percent, respectively. Moreover, Ta-hmad is highest protein,
vitamin A and calcium contents were 26.67 percent, 8,080

g/100 g and 1,212 mg/100 g, respectively when Kra-
dad-keal is lowest crude fat contents (0.23 percent). Antioxidant properties of 4 selected local vegetables were also
analyzed by DPPH method. The result showed antioxidant activity of Tam-mung, Kra-dad-keal, Ta-hmad and
Klouy thieun were 48.97, 45.44, 21.90 and 3.92 percent, respectively. This research can be used to promote people
in community especially youth people turn to consume local vegetables.
