Abstract
The study of factors affected the pectin extraction behavior from lime peel with modified machine, were
acid used to adjust pH of the lime peel extract to 2 or 3, such as hydrochloric acid, sulfuric acid, and phosphoric
acid. Extraction time was 30 or 60 minutes. The result showed that appropriated condition for the extraction was
10%v/v hydrochloric acid used to adjust the extracted solution to pH 2 for 60 minutes extraction period. The yield
of extraction was 2.34±0.05 % dry weight. All pectin extracts were the same physical and chemical properties,
such as pectin’s appearances were loose and fine powder, easily moisted with differentiated colors from beige to
brown. Extracted pectin soluble in water, yielded a clear yellow to strong brown solution with pH 3-4. White
gelatinous precipitate occurred when acid or base were added. All pectin extracts gave a gelatinous precipitate in
Ferric ChlorideTest, polysaccharide test, pectinated test, clear brown solution in Seliwanoff’s test
