Abstract
The objective of this study was to determine effect of harvesting maturity on quantity of
protein and GABA content in brown rice and germinated brown rice by three different mature ( 30, 37, 44 days)
after flowering. The result showed that harvesting maturity were effected to protein accumulating in brown rice.
