The Study of Appropriate Rotating Speed and Fin Shape Variables for Pickled Fish Kneading Drum

บทคั ดย่อ
การวิจัยนี้ มีวัตถุประสงค์เพื่อศึกษาตัวแปรที่เหมาะสมสําหรับการนวดปลาส้มด้วยถังหมุน โดยมุ่ งเน้นการศึกษาตัว
แปรความเร็ วรอบ รู ปทรงของถังนวดปลาส้ม รู ปทรงชุดกลับปลาส้ ม และตําแหน่ งการติ ดตั้งชุ ดกลับปลาส้มที่เหมาะสม
สําหรับการนวดปลาส้ม ผลการวิจัยพบว่าเมื่อนวดปลาส้มโดยใช้ถังใส่ ปลารูปทรงกระบอก ด้วยชุดกลับปลาส้มรูปทรงครึ่ ง
วงกลม จํานวน 3 ครี บต่อชุด และใช้ ความเร็วรอบเท่ากับ 64 รอบต่อนาที ส่งผลให้ค่ าความแน่นของเนื้อปลาลดลงมากที่ สุด
เท่ากับ 26.49% และความแน่นของเนื้ อปลาเมื่อทําการนวดโดยใช้ถังใส่ ปลารู ปทรงหกเหลี่ยม มี ค่าความแน่ นเนื้อปลาลดลง
จากค่าความแน่นเนื ้อปลาก่อนการนวดเท่ ากับ 14.74%

Abstract
The purpose of this project is to study the suitable variables for pickling fish kneading drum which emphasizing
on the following variables; the appropriated speed, the proper shape of pickled fish drum, the fin shape of pickled fish and
the setting position of fin for the kneading drum. From this research we found that when we used the pickled fish cylinder
shaped bucket, the 3 pieces of half-circle fin shape and the setting speed at 64 rpm. The result shows that the most declined
percentage of the fish firmness is 26.49%, compare to the firmness before kneading the fish. But when we used the pickled
fish hexagonal shaped bucket with the same fish shape and the same speed, the most declined percentage of fish firmness
is 14.74%.
